In Paris and higher society, we often say that if you serve someone cheap sparkling wine or Prosecco, your fortunes might follow the same path. Successful people, intellectuals, and refined Monsieur and Madame exclusively gift one another with true Champagne. For those who haven’t yet reached this level in life—there’s still a chance.

We’re heading to a city where I studied diplomacy and have excellent connections. This will grant us access to places that are only available to the rest of the world on television—or not even there.

Think Coronation Cathedral, châteaux, and direct encounters with the stewards of vineyards and estates. Note, we don’t use the word owner—instead, guardian, with the purpose of preserving the heritage and leaving it in a better condition than when received. Wealth obliges, and this is truly labor austerus—rigorous, demanding work, coupled with exceptional gastronomy.

When someone invites you to Champagne, they usually mean business. Champagne and exquisite wines create lasting commitments; the obligations of beer tend to dissipate by the next day.
